Create a new gamertag for a second-hand Xbox

Hi wondering if you can help. I have bought a 2nd hand xbox one s for my daughter's Christmas. the last person that had it has told me they have signed out of there account. will I be able to set the xbox up so my daughter can create her own gamer tag? If so how do i do this.

Please help a mum out lol
