If I'm on next-gen and buy the series x|s version of a game can I play online with someone on current-gen with Xbox one version of the game? Can't find an answer to this question anywhere.

Yes. If a game is available to play on both Xbox Series X|S and Xbox One, you’ll be able to play multiplayer with gamers from both systems.
Note Crossplay is at the publisher's discretion, so there may be examples in which players on Xbox Series X|S won’t be able to play cross-platform with Xbox One players.
Is there any way of telling which games publishers will support?
